Lycopene

Lycopene is a carotenoid. Tomatoes are a major dietary source of this compound (Solanum lycopersicum), from which it (and its derivatives) gets its name. The level of Lycopene is dependent on how mature the tomato is: the more mature the tomato is, the higher the concentration of carotenoid. Other natural sources are melon, pink grapefruit and guava fruit. Just like other carotenoids, lycopene has antioxidant properties.
